What could be better than to have all the pancake recipes on the blog in one handy place! Your wish is my command. Savoury, sweet… it’s all here. Feel free to add links to any great recipes you know in the comments. Share the pancake love.
Lots of great recipes like this in my books, Recipes from a Normal Mum, (available on Amazon, at The Works, Waterstones, WHSmith, The Book Depository and many smaller outlets) and The Power of Frozen (available exclusively in Iceland stores and through their website) which is just £2.99 at the mo! And no, the recipes are not just about frozen food. Every recipe has instructions of how to make with chilled ingredients too.
This time last year: Rye, spelt & poppy seed rolls, Never fail pancakes, Fluffy sweet potato pancakes, Mars Bar brownies and I wrote a letter to my 15 year old self with all the things I’d wish I’d known over 20 years ago.
First up I give you a very basic recipe that works incredibly well. It is my never fail recipe for plain pancakes. Not only that, I also give you CHOCOLATE pancakes and even a spinach and ricotta filling for the plain pancakes. These were all made for This Morning. You can watch the video and see the recipes here. The plain recipe without the extras is on my site here.
Next I give you some pancake topping inspiration. This is a crowd sourced list of amazing topping ideas if the old lemon and sugar leaves you cold. Click here to see it.
And now I come to a more savoury incarnation of the humble pancake. I give you my fluffy sweet potato pancakes. These are seriously good. This is most definitely where my pancake heart lies. The recipe is here.
In the same theme I have these delicious fritters, which is really just another name for a pancake. These house halloumi, courgette and carrot. You can grab the recipe here.
Another very similar recipe for carrot, courgette and cheese (not halloumi) fritters is just here.
And then a recipe which was really designed for toddlers and babies in mind but actually makes me feel all nostalgic. It was one of the first recipes I blogged and because some kind soul posted it in the Baby Led Weaning forum the blog went from very small to quite big within a few weeks. Thank you to that person. Here’s the recipe.
Have a flipping wonderful pancake day! (Mum joke)
